Hey all, Ivana here! Today, I'm going to be sharing one of my new favorite healthy meals to make, zucchini noodles! Personally, I am a huge pasta lover. Literally mention the word pasta and I'm yours. So obviously when I heard of zucchini noodles I was excited but also rather skeptical to try the recipe, because vegetables just don't give you the same satisfaction as a bowl full of carbs. Well, I was wrong on this one. Grated zucchini is actually a great alternative to pasta or noodles, especially when you are looking for something lighter to eat! I have yet to try them with Alfredo or tomato sauce (the more typical pasta sauces) but have actually been making an Asian version in the pan which I have been loving! It's a very simple recipe with minimal ingredients (everything to taste):
- Grated zucchini (we just use a peeler because we do not own a special machine for it)
- Grated carrots (optional- for a bit more crunch)
- Soy Sauce
- Sesame oil
- Sesame seeds
First, grate the zucchini and carrots into long thin strips to resemble noodles. Sidenote: the vegetables do not have to be peeled. Then, start by heating your stove. In a pan, mix your grated vegetables, soy sauce, sesame oil, and any other spices you would like to add. Put them on the heat and let them "cook" for a few minutes until the vegetables and sauces have combined. Finally, take them off the heat and garnish with sesame seeds. These can be served warm or chilled, I've tried them both ways and don't even have a preference. They're very good no matter how they are served. I hope you guys try this recipe out!
